Maria from Life Cleanse popped in for tea last week and brought some of her delicious brownies with her and I devoured the lot so we just knew we had to share the recipe with you so you can make them for yourself this christmas.

Marias fabulously festive brownies for Tasty Thursday:

The nutmeg and ginger add a nice festive flavour to these brownies. They’re great as a dessert or a sweet snack with tea. Personally I love them with a cup of the Pukka Revitalise blend to get me in the mood for Christmas!

 

Ingredients: Make 6

1 cup organic dates

1 cup organic sweet potato

1 heaped tbsp organic cacao powder

1 tablespoon organic coconut oil

1 and 1/4 cup organic walnuts

1 tablespoon raw organic honey

2 tsp organic vanilla extract

2 tsps organic ground nutmeg

2 tsps organic ground ginger

2 tsps organic ground cinnamon

Method:

Soak the dates overnight or for 6-8 hours and remove the pits.

Steam the sweet potato for roughly 20 minutes until soft and chop into small chunks. I usually steam sweet potatoes whole as they are much easier to peel and chop once soft.

Put the dates, sweet potato, walnuts, coconut oil and cacao into a food processor and process until smooth.

Add the honey, vanilla extract, cinnamon, nutmeg and ginger and process again to allow all of the flavours to mix through.

Spread a teaspoon of coconut oil onto a small baking tray and then add the mix. Use a hot knife to make indentations for 6 brownies and bake at 170 degrees celsius (150 c for a fan assisted oven) for 35 minutes.

Boost your brownies – Adding a supergreen powder to sweet treats is a great way to sneak some superfoods into little ones or unsuspecting guests. I added a heaped teaspoon of Moringa leaf powder to these ones. Moringa is a true superfood packed full of 92 nutrients including 46 antioxidants, 18 amino acids, iron, calcium, magnesium, potassium, omega 3,6,9 and loads of vitamins! You can add this at the same time as the cacao.

Well visiting Santa sure has changed since I was a kid. Being a big kid myself i’m pretty happy about this as I also get to indulge, giggle, have fun and most of all watch James smiling from ear to ear. My cool as a cucumber son was colouring for Santa when he approached him in Hamleys and James very casually (as you do when you’re 2) said Hiya!

I like this guy… Does he have to hold my hand though??

For an extra special visit to Father Christmas this year, Hamleys in Dundrum has rolled out an exclusive 5 star experience, with an hour-long visit with Father Christmas that includes entertainment and games, a Christmas goodie bag, and a tasty meal specially prepared in Santa’s kitchen.  Numbers are limited to just 20 children per visit, and each child is guaranteed special time with Father Christmas.

Don’t look mum in the eye and she’ll never notice yum!!

James thought all his birthdays had come at once when he had a plate full of goodies. This never happens at home so another bonus point for Santa in our house. From Saturday 10th November until Christmas Eve visitors can enjoy an exciting breakfast, lunch, or tea-time meeting with Father Christmas and his elves, costing €25 per child.  Breakfast is scheduled from 7.30am until 8.30am, making a fantastic start to the day, and something to tell everyone in school or crèche.  Tea time with Father Christmas is from 5.00pm to 6.00pm daily, and on Saturdays and Sundays there is also a lunchtime visit starting at 12.00 noon.

Meals include nutritious children’s favourites such as Christmas tree toast, scrambled eggs, beans, hot pancakes and pastries, served with juice and hot chocolate, and a sweet treat for afters.  Tea and coffee is provided for adults.

Children aged from two to eleven years are catered for in this magical experience.. Why not plan a special occasion around it, be it a Birthday or Christmas party.
