AC_days_tastythursday carrot apple juice

This is hands down one of my favourite juices. As we move into the colder months I start to include a lot of ginger and tumeric in my diet. It’s a great alternative to your OJ in the morning. This juice will energise you, help with digestion and is a strong anti-inflammatory juice.

This is also a great juice for kids but what I do is juice 3 carrots and the apple and give some to James and then add the ginger and tumeric for myself followed by 2 more carrots!


  • 5-6 CARROTS (Add an extra 1-2 carrots per child)
  • 1 RED APPLE ( More than 2 kids add another one. One Apple= 2 servings)



*For kids I just juice carrots and apples first. I usually get away with adding tumeric but not ginger!! (Just yet!)

Today is the beginning of Oprah and Deepak’s 21-Day meditation Series on “Manifesting Grace Through Gratitude”. I absolutely love these meditation series as they are thought provoking, easy to follow and complete.

For me meditation is a chance to just sit still with myself and be present. For such a long time I lived life in fast-forward. I felt like a DVD player whose button was stuck and I was too busy top go and get repaired. When my world fell apart I had two choices to face what was happening or bury my hand in the sand and wallow in my own self-pity.

It was at that point I actually realized how selfish I had been for years. Partying myself almost to death at times in an effort to block out reality. I didn’t even realize the pain my friends and family were in watching me but in hindsight I also had no idea how to help myself.

When I chose to face the music the weeks and months and indeed years that followed were some of the most difficult of my life so far. Throughout this time one of the many tools I used was meditation. I’m very often asked if meditation can bring up strong emotions and the simple answer is “yes it can!” But what I found powerful is that sometimes words aren’t enough and we if we really want to heal on a deeper level unfortunately we do need to dig deeper to get to the truth. I use the word unfortunately here because it can be hard work and very hard on yourself personally but let me tell you it’s worth it in the long run.

I combined meditation with journaling, counseling, exercise, nourishment from food and I also kept a gratitude diary so when I listened to todays initial meditation from Deepak and Oprah the tears flowed and instead of fighting them like I used to I let them flow. I wrote in my journal for a while afterwards because I obviously hit a nerve and what I realized yet again is just how powerful the art of gratitude is. When you are deeply and truly grateful for something you will feel emotions. Part of my tears today are relief that I pulled through and sometimes I get overwhelmed by emotion when I think of how kind some people have been.

So try not to be afraid of who you are and your emotions. Own your feelings, recognize them and if necessary ask for help in figuring them out but never ever be afraid to just be who you are because we are all different and unique and this world needs you to shine your light brightly as there is only one of you and no matter what you think you are important too!!

It has been a wonderful day of food, friends and fun. I just got home from The Taste of Dublin which gets bigger and better every year. This is the first year I didn’t have James with me though as Mum took him to Wexford for the day as I went to see Patrick Holford talk about stress this morning!!

His talk was on in Fitzpatricks Castle in Killiney organised buy Select Stores Patricks talk focused a lot on breathing to reduce stress and In my opinion the busier you are the more you need to meditate and take time out. A few things really stuck with me from his talk:

Both of these quotes are so true and it really is up to us to take our health, stress levels and the quality of food we eat into our own hands We also need to make better informed choices about the food we eat on a daily basis!

I headed into town after and met up with my friend John and after eventually finding parking we went to The Taste of Dublin. I had heard so much about #primebyAldi, Aldi’s incredible restaurant at Taste so I was dying to experience it for myself. My sister Laura was there on Friday and she was right, it really was that good! I met Lucy Kennedy and her adorable little girl Holly and we all tucked into an amazing menu prepared by chef Gary O’Hanlon

I was really impressed by the healthy stands this years including raw juices by McCormack family farms Mc Cormack family farms and I arrived home with my wheatgrass for the week from My Organics Farm

IMG_6635Spring break were playing and there were Minions everywhere as the new movie is coming out. The old parental guilt hit me then as James loves the Minions even though he hasn’t even seen the movie yet!! He even has swimming shorts and T-Shirts for his holidays next week.

healthy lifestyle


So this may come as a surprise to most people but BEING HEALTHY DOES NOT HAVE TO MEAN LIFE WILL BECOME BORING!!!

Believe me this was also my greatest fear after all for years I perceived exercise as hard work and eating healthy food as a boring and a tasteless waste of time. I also thought happiness could be found at a party, when I booked my next big gig or indeed when I became accepted by my peers, so yes very sadly I worried what people thought of me. I searched for years and years for that slippery sucker called happiness but it felt that every time I got near it, well, it disappeared again.

Being healthy was the last thing on my mind as i never really thought that being healthy meant that much. Now I realise that I really didn’t value myself and probably didn’t feel like I deserved to be healthy and happy.

You see being happy is not something you can buy, a place you can travel too or indeed a company you can be employed by! It’s inside of us all already but we need to mind it and nourish it with a good lifestyle and good life choices.

The way I see it is that for years I worked hard at partying and sabotaging things for myself and the end result was depression and anxiety but now I spend time and work hard at being the best I can be and the reward for all this hard work is vitality, energy, contentment and excitement every day for what’s coming next!

Being healthy is the single greatest gift I have ever given myself. But my advice is that small changes make a big difference so don’t try to overhaul your lifestyle overnight.

Here are some great starting points:

1. Find an exercise you actually like

2. Drink more water and start each day with lemon water

3. Get enough sleep!!

4. Be grateful – write down 5 things each day you are grateful for.

5. Nourish your body with fresh foods – every thing you eat becomes a part of who you are!!

Start simple and build from there. Feeling good feels so good that it is definitely something I want to hang on to.

So take the first steps and learn to love yourself and in turn you’ll start to love your life. Believe me you won’t regret it!

You can live for up to 50 days without food but without water you will only survive for a few days



On average our bodies are made up of about 60% water so keeping hydrated is really important. We lose water all the time by sweating, going to the bathroom and even breathing. Its suggested that we drink 6 to 8 glasses of water a day but I find drinking plain water really hard so here are some ideas for sprucing up your water and getting more fluids into you on a daily basis:

1  Keep a bottle of water with you all the time- in your bag, the car or on your desk at work

2  Add a slice of lemon or lime to your water- I start every day with warm water and lemon. When you wake up your body is dehydrated after a long nights sleep so this is an ideal way to start every day .It is now simply a daily habit that I do automatically.

3  If you find it tough to remember to drink water set an alarm on your phone. I do this if I’m really busy and it works!

4  Remember that we often mistake hunger for thirst so if in doubt drink first as true hunger will not be satisfied by drinking water.

5  Experiment with the different flavours of herbal teas and reduce the amount of caffeinated drinks you have as caffeine is a diuretic.

6  Include more water rich foods in your diet. A few examples are: cucumber, watermelon, strawberries, star fruit and peppers.

7  Check your urine to check your hydration. If you’re well-hydrated your urine will be mostly clear with a tinge of yellow.

As you will know by now I’m a big fan of doing a lot of little things to keep healthy. By this I mean eating well, exercising, meditation, keeping a gratitude diary every day and, much more. The trick is to find what works for you and everyone is different. As a busy mum my nutribullet has been a lifesaver as sometimes I simply don’t have time to juice in the morning and my nutribullet is just so easy to clean but there is a difference between juicing and blending and a nutribullet is a blender.


The main difference is that juicing removes the pulp and extracts most of the liquid nutrients and water from the fruits and vegetables. Blenders pulverize the whole produce making it into a smoothie. The pulp is what is called indigestible fiber, which has no nutrient content but is essential and very important for a healthy diet. It helps to keep your digestive system and gut healthy and it also slows down the absorption of sugar which is why you should not juice a lot of fruits together as the sugar will get absorbed quite quickly leading to your blood sugar becoming unbalanced which causes mood swings and believe it or not energy loss!


The trick is to use mostly vegetables when juicing or blending. When I’m juicing however I always notice how much more produce I go through so as Jason Vale says juicing really is “a nutrient express”.
